Turkey Burger

Ingredients

  • 28 oz Ground Turkey
  • 4-5 oz Crumbled Bleu Cheese
  • 1/3 Cup Chunky Applesauce
  • 4-5 Strips of Hickory Smoked Bacon, Crispy and Crumbled into bits
  • 1 Tbs Extra Virgin Olive Oil
  • 1 Tbs Bob's World Famous Steak Seasoning

50 Minutes

In a large mixing bowl add the first four ingredients. Hand mix the ingredients only enough to evenly distribute the cheese and bacon bits. Evenly divide mixture and form 4-6 turkey burgers. Place the burgers on a meat platter, cover with plastic wrap and place in the refrigerator for 30 minutes to help firm up the turkey burgers.

Remove turkey burgers from the refrigerator, lightly coat each side of each burger with olive oil and generously season both sides of each turkey burger with Bob's World Famous Steak Seasoning.

Pre-heat grill to 350 degrees. Place turkey burgers on the hot grill grate, grilling each side for 7-10 minutes each. Place a meat thermometer in the thickest part of burger and remove from grill when the internal temp reaches 165 degrees.

Grilled Boneless Chicken Breast

Ingredients

  • 4 Boneless Chicken Breast
  • 1 Tbs Extra Virgin Olive Oil
  • 1-2 Tbs Bob's World Famous Steak Seasoning

Pre-heat grill to 350 degrees. Place chicken breast and olive oil in a re-sealable plastic bag; shake the bag to coat the chicken breast with olive oil. Place olive oil coated chicken breast on a meat platter and sprinkle both sides of the chicken breast with Bob's World Famous Steak Seasoning. Place chicken breast on the hot grill grate, grilling both sides for seven minutes. Place a meat thermometer in the thickest part of chicken breast and remove from grill when temp reaches 165 degrees.

Meat Brine

Ingredients

  • 1 Gallon Water
  • ¼ Cup Bob's World Famous Steak Seasoning
  • 1 Cup Kosher Salt
  • ½ Cup Brown Sugar
  • 1 Garlic Bulb peeled and minced
  • 2 TBS Onion, minced
  • 1 TBS Course Black Pepper
  • 3 Bay Leaves, crushed
  • 2 Oranges, quartered
  • 2 Lemons, quartered

Total Time

120 Minutes

Combine all of the ingredients in a non-reactive container (plastic bowl or plastic pail) large enough to contain the brine solution and meat.

Completely submerge the meat in the brine solution for 2-3 hours, (must be refrigerated while in the brine). If brining a whole chicken/turkey a 6 hour brining time may be necessary.

Remove meat from the brine and rinse thoroughly with cold water. Place rinsed meat on a meat platter or other container, cover and refrigerate for a minimum of 45 minutes.

Once the meat is well rested, remove from the refrigerator, season generously with BWFSS. Pre-heat the grill to 350°, place meat on hot grill and seer each side of the meat. Continue cooking the meat until it reaches FDA recommended internal temperature.

Helpful Hints
The brining time is critical; too much time in the brine and the meat will be salty, too little time in the brine and you will miss the 'magic' of brining.

The 'resting period' after the brine is also very important. Once the meat has been removed from the brine and rinsed thoroughly, it must rest for a minimum 45 minutes. It can remain resting, while being refrigerated, (for longer than 45 minutes), but never shorter.

Grilled Chicken over Balsamic Blue Cheese Greens

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1-2 TBS Extra virgin olive oil
  • 1-2 TBS Bob's World Famous Steak Seasoning
  • ¼ cup extra-virgin olive oil
  • 2 TBS balsamic vinegar
  • 3 pinches salt
  • 10 to 15 grinds black pepper
  • 1 bag mixed greens
  • 1 English cucumber, peeled, cut in ½ lengthwise, then cut into ½-inch
  • 3 vine-ripened tomatoes, cored and cut into ½-inch chunks
  • cup black olives, coarsely chopped
  • ¼ cup crumbled blue cheese

Let the chicken rest on a cutting board for a few minutes before slicing into strips.

Assemble the salad: Place salad greens in large enough bowl to hold all ingredients. Pour dressing over greens and mix thoroughly. Scatter cucumbers, tomatoes, olives and blue cheese over the top. Place chicken strips on top of salad.
